Broccoli Salad

Delicious cold salad for hot summer days.  This holds well in the refrigerator, so make the whole recipe and have plenty of leftovers for the next few days.

Ingredients

  • 4 heads broccoli
  • 1 C cranberries (or craisins)
  • 1/4 C olive oil
  • 2 Tbsp coconut aminos
  • 1 Tbsp honey
  • 3 Tbsp lemon juice
  • 2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger

Directions:

Chop broccoli and cranberries and toss in a bowl.  Mix the remaining ingredients together well and pour over the broccoli/cranberry mixture.  Refrigerate.

Serves 8

w/ cranberries: 184 calories, 9g protein, 25g carb, 9g fiber (16 net carbs),
glycemic load: 10+

w/ craisins:  226 calories, 9g protein, 36g carb, 9g fiber (27 net carbs)
